INGREDIENTS (crust)

1 cup unsweetened shredded coconut,

½ cup of hazelnuts,

½ cup of almonds,

½ cup of pitted dates soaked in warm water.
FILLING

2 1/2 firm avocados,

1/4 cup of fresh lime juice,

1 tsp of lime zest,

1/4 cup of raw honey,

4 packets of stevia (optional)
METHOD

To make the crust place coconut, hazelnuts, almonds in a food processor and blend until coarsely ground.
Add the dates and process until the mixture begins to stick together,.
Grease 12 muffin tin or any other tin and press about 1 1/2 tbsp of mixture into the bottom of each cup.

To make the filling process all filling ingredients in a food processor until smooth.Pour 1 heaping tbsp of the filling into each muffin cup.Garnish with fresh slice of kiwi or lime. Freeze for 30-60 minutes to set.

Peanut Butter Balls

Peanut butter balls

Ingredients:

6 tbsp of rice crisp cereal or oats
1 cup of 100% crunchy natural peanut butter
3 or 4 tbsp of Maple syrup pure
2 tbsp of coconut flour
1 tbsp coconut oil
3/4 cups or more of dark chocolate

Method:

In a large bowl mix rice crisp cereal, peanut butter , maple syrup pure, coconut flour and coconut oil together to form a very thick mixture. Roll out in small balls about the size of a walnut

Place on waxed paper and refrigerate until hardened for about 30 minutes. Melt the chocolate then dip the peanut butter balls into the melted chocolate and set inside mini paper cupcake forms or on baking paper. Let the chocolate set before serving.

Raw Chocolate Cake

Ingredients:

  • 2 1/2 cups of walnuts or cashews soaked in water overnight
  • 1 cup of dates soaked in hot water for 30 min
  • 3/4 cup of cacao powder
  • Pinch of pink salt
  • 1 tbsp of coconut flour

Icing:

  • 1/2 coconut butter / oil
  • 1/2 cup of cacao powder
  • 1 tsp of vanilla extract
  • 4-5 tbsp of maple syrup
  • 1 tbsp of crunchy peanut butter (optional)

Method:

To make the cake:

  • Pulse oats or walnuts into powder in a food processor;
  • Add the dates and cacao powder and keep processing until it all starts to stick together;
  • Press into the bottom of a spring form cake pan or adjustable pan (or line a pan with a cling film so that it goes over the edges of the pan).
  • Put the mixture in the fridge.

To make the icing:

  • Melt icing ingredients together until smooth;
  • If it’s watery; add more coconut oil or nuts;
  • If it’s too thick; add water or maple syrup;
  • Pour the icing over the cake and place in the fridge for an hour.

Slice and enjoy! Why not decorating your cake with hemp seeds and pumpkin seeds.
